Chocolate in the form of unsweetened dark chocolate or unsweetened dark cocoa powder is often used to season chili con carne and other sauces for meat. Unsweetened chocolate which most people perceive as bitter by itself, does - in point of fact - add a certain boost to the body and overall bigness of flavor to certain chili sauces. By the way, the heat of chiles is actually caused by a wide range and collection of irritants which cause the sensation of a sharp burn-like pain' on the tongue and mouth and skin. These irritants are collectively called capsaicins. In this same family of irritants - all of which do in fact contribute to the overall 'flavor' of things we eat - are such familiar ingredients as mustard, horseradish, wasabi, and ginger; pure unsweetened cinnamon is also an irritant as is ground nutmeg, black pepper, and cloves especially if they are sampled "neat" (i.e alone, ... without anything else.)

Pedernales River Chili
(aka: “A Bowl of Red”)
Pronounced ‘Pur-DIN-alice’ - According to Lady Bird Johnson, the following recipe is what President Lyndon B. Johnson considered “authentic” Chili Con Carni. Note that this recipe has NO beans; however, also note that “authenticity” is in the mind of the beholder.”
In fact, She is also quoted as saying, "It has been almost as popular as the government pamphlet on the care and feeding of children."

And, L.B.Johnson, 36th President of the United States, supposedly said: "Chili concocted outside of Texas is usually a weak, apologetic imitation of the real thing. One of the first things I do when I get home to Texas is to have a bowl of red. There is simply nothing better." …

Anyway here is the recipe:

4 pounds coarsely ‘chili-ground’ (or cubed) beef
1 large chopped onion
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
6 teaspoons chili powder
2 16-ounce-cans tomatoes
Salt to taste
2 cups hot water

In a large frying pan, brown meat with onion and garlic until meat is lightly browned; transfer ingredients to a large kettle.

Add oregano, cumin, chili powder, tomatoes, salt, and hot water. Bring just to a boil; lower heat and simmer, covered, for approximately 1 hour. Remove from heat. Skim off grease and serve.

Serves 12.
